Characteristics of Matcha
100% Matcha, a food derived from nature, is a very simple food that is made by simply steaming and drying the picked raw leaves, sorting them, and grinding them. Therefore, the quality of the raw tea leaves is directly linked to the quality of the matcha. To make delicious matcha, it is necessary to be familiar not only with the processing and manufacturing methods, but also with the cultivation and characteristics of the raw tea leaves. Yamamasa Koyamaen originated as a tea farm, and is one of the few matcha manufacturers that still has its own farm. By carrying out the entire process from tea cultivation to grinding, we strive to produce high-quality matcha.
Matcha is a fine powder with extremely fine particles (approximately 5 to 10 microns), so it is prone to absorbing moisture and odor, and is easily affected by light and fades easily. Another characteristic is that it deteriorates quickly when the temperature or humidity is high.
